As many peoples agree it, Kwangju is a primate city for Kimchi in
the Republic of Korea. To spread & publicize Kwangju Kimchi all
over the world, Kwangju Metropolitan City & Honorable City Mayor
Yoon Jang-hyun invite Excellencies & Madames including senior diplomats
from the Seoul Diplomatic Coprs. once again following last year's
successful famtour organized by The NDNnews & Korea Culture
Ambassador Friendship Associaiton as a media partner in partnership
with Kwangju Metropolitan City.

The 24th Kwangju World Kimchi Festival takes place during 3 days
from Nov. 17th(Fri.) through Nov. 19th(Sun.) in the whole place of Kwangju Kimchi Town as well as World
Kimchi Laboratory with a variety programs such as kimchi experience
programs, cooking classes, competition programs, exhibition events,
special events such as oversea buyer invitation international kimchi
conference and kimchi master academy etc..

Besides experiencing how to make Kimchi in the Kwangju Kimchi
Town during the opening ceremony, participants can share visit
programs such as 5.18 Kwangju graveyard, Moodeung Mountain
World Geology Park, Kwangju Asia Center visit in addition to
dropping by Songjeong Night market etc.

this year, according to Kwangju Metropolitan City.
<Introduction of Kimchi>
Kimchi is a traditional Korean dish consisting of pickled vegetables,
which is mainly served as a side dish with every meal, but also can
be served as a main dish. Kimchi is mainly recognized as a spicy
fermented cabbage dish globally, but there are currently more than
200 variations, and continues to grow. These variations of kimchi
continues to grow, and the taste can vary depending on the
region and season.
Kimchi has been a staple in Korean culture, but historical versions
were not a spicy dish. Theories of the origin of Kimchi varies
including a belief that it appeared during the Shilla Dynasty, and
became prevalent once Buddhism caught on throughout the nation
and fostered a vegetarian lifestyle. However, the addition of spicy
peppers to this cultural dish did not appear until the arrival of
Portuguese missionaries in the 1700s who brought chili peppers.
The pickling of vegetables was an ideal method, prior to refrigerators,
that helped to preserve the lifespan of foods. In Korea, kimchi was
made during the winter by fermenting vegetables, and burying it in
the ground in traditional brown ceramic pots called onggi (옹기). This labor further allowed a bonding among women within
the family.
Kimchi can be categorized by main ingredients, regions or seasons.
Korea's northern
and southern sections have a considerable temperature difference.
There are over
180 varieties of kimchi.
